Vietnameses pancakes
Ingredient :
Pancakes :
115 g. Flour
35 g. Maïzena
1 t. Spoons Curcuma
½ litre Water
1 t. Spoons Oils
Stuff:
200g. Shredded pork
1 Onion
32 Shrimps
1 t. Spoons Fish sauce
Green onions
2 Gloves garlic’s
Soya sauce (optional)
Green salads
Fresh Herbs (mints, corianders….)
Sauce Nuoc nam “Dipping” (only mix together):
2 Garlic’s cloves
3 t. Spoons Sugars
2 t. Spoons Lime juice
½ cup Warm water
6 t. Spoons Fish sauce
½ Teaspoon Ground hot red chilli peppers
Preparation :
1. Mix together: flour, maizena, curcuma, water. Add oil and let reserve for 30 minutes.
2 Cut the onions, garlic, shrimps, and pork in small pieces and cook together.
3. Add the fish sauce and the green onions
4. Cook the pancakes both sides, add the stuff inside and cook together for 1 minute.
5. Ready to eat; cut your pancake in smalls pieces, roll it in a piece of green salad with fresh herbs inside.
6. Deep each piece in the special dipping sauce Nuoc nam.

Springs Roll
Ingredient :
Rice sheets
Green salads
Beans sprouts
Mints
Shrimps
Shredded carrots
Fresh corianders
Vermicelli
Shredded cucumbers
** Serve with the dipping sauce Nuoc nam (see; Vietnamese’s pancakes)
Preparation :
1. Put the vermicelli in boiling water for couple of second.
2. Shred the carrots and the cucumbers.
3. Humidify a tissue, and put the rice sheet on it and with your finger, wet it again.
4. Add in each roll, a little bit of vermicelli, carrots, cucumbers, mints, corianders, 1 shrimp, beans sprouts, pieces of green salad add roll.
5. Serve with the special Nuoc nam dipping sauce.
6. Keep fresh; add a wet tissue on the rolls to keep them humid and fresh for long.

Pho (Vietnamese Soup)
Ingredient :
1 Piece fresh ginger
2 Big onions
3L. Water
1kl. Beef bone
Salt
3 Pieces anis
1 Cinnamon stick
Pepper
250g. Beans sprouts
250g. Uncooked beef faux filet
60 g. Poireau jaune
Fresh herbs (mint’s, corianders, ngo gai…)
Green salad
Smalls red hot chilli pepper
Preparation :
1. Roast the onion and the ginger
2. In a pot, add the water, the bone, the beef breast. Boil
3. Add salt, ginger, onion, anis, cinnamon.
4. Cook 45 minutes and removes the beef and cut it in fine slices. Separate the soup in another pot; Salt and Pepper.
5. Put the noodles and the beans sprouts in boiling water
6. In an individual bol, add the noodles, the beans sprouts, the beef uncooked and the slices breast, the onions and the gingers.
7. Add the soup
8. When ready to eat, add in your bol some pieces of greens salads, fresh’s herbs and red hot chilli peppers
9. Add Soya sauce and fish sauce (optional)
